The Black Salami Micro bakery

The Black Salami Micro bakery is a vibrant, young bakery in Exarchia, Athens founded by bread-enthusiast Antonis Kazakos and Greek-Italian master baker Bruno Pezzia. They opened their doors in October 2021, out of necessity to create work opportunities during the economic crisis and covid pandemic. At The Black Salami, the employees work with the principles of self organising teams. Founder Antonis Kazakos tries work in a non-hierarchical way, managing as little as possible and giving employees the freedom to be creative and do what they love. And it works. The moment it opened its doors, Black Salami became an instant hit.

Kazakos isn’t a baker by training. He has a degree in political science, and worked abroad in qualitative and quantitative data analysis, before returning to Greece in 2005, where he fell in love once again with his native language and the city of Athens. His vision is to let a business evolve like a living organism, constantly changing and evolving to adapt to it’s circumstances. In this documentary we explore if, and how, this works.
